I have been making this recipe for about two years now. My family loves it and is so versatile with what you can make from it. We use it for tacos, quesadillas, nachos, wraps, and salads. Plus it is also good to just eat by the spoonful!
I made some changes with the prepackaged seasonings. Since I have been cutting out processed foods and introducing more clean foods into our family diet I no longer use any packaged seasonings. Why? Because spice packets add a lot of extra salt, empty calories, and mystery ingredients. Plus it is cheaper to make your own. Why spend a dollar on a packet for one meal when you can spend about $3.00 and get 20 meals out of it. Plus you know exactly what is going into your dish! I have included my recipe for the taco seasoning and ranch dressing below.
4-5 chicken breasts
2 cups of chicken broth
ranch mix (see recipe below)
taco seasoning mix (see recipe below)
(** I always make a big batch of the seasoning up and store them.)
1. Put chicken, taco seasoning, ranch seasoning, and chicken broth in Crock Pot.
2. Cook on low for 4-6 hours
3. Shred chicken with fork and let it soak up the broth.
Here are a few ways how we eat this dish of yumminess: Add the chicken mixture it.
Quesadillas: I like to add black beans, corn, cheese, chicken mixture on a wheat tortilla and grill it.
Tacos: Serve on taco shells or tortillas with lettuce, tomatoes, black olives, salsa, and Greek Yogurt (we use this in place of sour cream) or any toppings of your choosing.
Nachos: Serve on tortilla chips and add your liking of toppings
Salad: Lettuce, black beans, corn, tomatoes, salsa, avocado and Greek yogurt.
