I am loving the new recipes as I have started the Whole30 Program. We always made a pepper casserole but it had black beans and cheese. I was not sure how I would like this recipe since cheese and black beans are one of my favorites. But I am in love. Luckily my family had other plans for dinner so I had lots left over! I portioned the casserole
Cauliflower Rice Stuffed Pepper Casserole
Love stuff peppers? Well you will love the stuff pepper casserole.
Preheat the oven to 350 F.
Cook ground beef and sausage until cooked through.
Add the onions, mushrooms, peppers, and garlic over medium heat until slightly soft.
Add the cauliflower rice to the and cook another 3-5 minutes.
Add the can of crushed tomatoes and all the spices. Let it simmer for a few minutes for some of the liquid to boil out.
Stir and pour into a 9x12 pan. Bake for 45 minutes.
