Skillet/Oven Potatoes

Can you believe that I did not even get a photo of the finished product?!  It looked, smelled and tasted so good we gobbled them up in no time!  I plan on making them again sometime this week so I will definitely get a picture of them! 🙂

Ingredientsskillet potatoes
  • 4-5 Russet potatoes chopped in 1 to 1 1/2 inch pieces.
  • 1 onion chopped
  • 1-2 tbsp of fat (bacon grease, coconut oil, ghee) I used bacon grease.
  • 1 tsp salt
  • 1 tsp pepper
Directions
  1. Preheat your oven to 425 degrees.skillet potatoes
  2. Heat the fat into a cast iron skillet on the stove.
  3. Add the onions, potatoes, salt and pepper.
  4. Cook for around 10 minutes on the stove Stir frequently so the potatoes and onions do not stick.
  5. Next put the skillet into the oven and cook for 15 minutes.

Recipe Notes

These potatoes were great substitute for biscuits. Luckily I had leftover for breakfast the next day.  The potatoes would also be great as a side dish for dinner.
